Quick and easy Potato Broccoli Cheese Soup Recipe

I love creating new recipes. Most of the time my best recipes come out of trial and error. How about you? Do you make new recipes? What are some of your favorites? Soup recipes are some of my most favorite to make.

Potato Soup Recipe

I never make broccoli cheese soup. I use to make it for my husband until I was pregnant and got very sick eating it.  I tried several times to make it but the smell got to me.  Weird thing is that I love broccoli and eat it whenever I can.  Today I was pulling from what I had on hand to make a quick dinner.  I decided to make potato ham soup.  I didn't have milk or cream on hand.  I knew that the potatoes when smashed would give this soup a beautiful creamy texture.  I knew it needed more to it.  Searching in the freezer I found a very large bag of broccoli.  I dumped it in my creamed soup and tasted it after a few minutes of simmering.  Guess what? It didn't make me sick.  I think the potatoes cut the taste that nagged me!  My family was very happy to get this soup!

Quick and Easy Potato Broccoli Cheese Soup (Ham optional)

Ingredients

5lbs potatoes, peeled and chopped
1lb ham, chopped (great use for leftover ham)
1 large bag frozen broccoli (fresh works too)
1T. garlic powder
1 tsp salt
1T. crushed red pepper
1 T. Mrs Dash original blend
1 stick butter

1 can evaporated milk
12 slices of American cheese (cheddar works great too)
Parmesan cheese
Garlic Croutons or crackers.

Directions

1-Boil potatoes and ham in just enough water to cover potatoes.
2-Cook until potatoes are tender.
3-Mash the potatoes with back of spoon and add everything but the cheeses. 4-4-Simmer until thick (approx. 30 min.)
5-Add cheese and serve!  Garnish with Parmesan cheese and top with croutons!

Kitchen Notes

This soup took 1 hour from start to finish.  I had all the ingredients on hand.  Go check your pantry. Maybe you can make this tomorrow!

We use Mrs. Dash all the time for cooking and seasoning our food.  I'm so impressed with all their seasonings. Very seldom do I season our food with salt. I do use a little of salt when making potatoes.
