I have made this so many times and every time I do the recipe gets passed onto someone new! They kindly shared the recipe from Almost Homemade Gooseberry Patch Cookbook.
This recipe couldn't be easier to make! If you have a chocolate-peanut butter fan in your house, they'll be gone before you know it! Buckeye Brownies, from Almost Homemade cookbook, submitted by Heather Prentice of Mars, PA
19-1/2 oz. pkg. brownie mix
2 c. powdered sugar
1/2 c. plus 6 tablespoons butter, softened and divided
8-oz. jar creamy peanut butter (yes 1 cup or 8 oz not 18 oz)
6-oz. pkg. semi-sweet chocolate chips
Prepare and bake brownie mix in a greased 13"x9" baking pan according to package directions. Let cool. Mix powdered sugar, 1/2 cup butter and peanut butter. Mix well and spread over cooled brownies. Chill for one hour. Melt together chocolate chips and remaining butter in a saucepan over low heat, stirring occasionally. Spread over brownies. Let cool; cut into squares. Makes 2 to 3 dozen.

Just got invited to a new year day party. This is what I will b taking, I have everything in my cupboard, sounds great cant wait to taste these and so much easier then the round buckeyes.

The buter is just 1/2 cup for the first step and it is just very soft, not melted. The last 6 Tablespoons does get melted with the chocolate chips to put on top.

D you even really need the butter in the peanut butter layer. An awful lot of extra calories if it really won't make a difference if it's in there.

Hi Sandra,
I can't respond to your personally, I don't have an email add or anywhere to respond so I hope you see this message.
You don't have to use a mix for the bottom layer. Just make your own brownies from scratch and then do the two layers as directed. HOpe that helps!

Mix powdered sugar, 1/2 cup butter and peanut butter. Mix well and spread over cooled brownies. (the brownies will be cool enough to then add the peanut butter)
Chill for one hour. (if you don't let chill then you won't be able to spread on the chocolate layer)
Melt together chocolate chips and remaining butter in a saucepan over low heat, stirring occasionally. Spread over brownies. Let cool (letting them cool before eating is up to you ...if you can wait that long. You'll see when make them. they are worth it.)
; cut into squares. Makes 2 to 3 dozen.

Should these be refrigerated until served? I was going to bring to work but didn't know if it was best to keep in the fridge or if they could sit out.
