Best Ever Buckeye Brownies - Most Pinned Post

Thanks to an office potluck at Gooseberry Patch this peanut butter recipe is here for us all to drool over! Gooseberry Patch shared it on their Facebook page

I have made this so many times and every time I do the recipe gets passed onto someone new!  They kindly shared the recipe from Almost Homemade Gooseberry Patch Cookbook.
Buckeyes
This recipe couldn't be easier to make! If you have a chocolate-peanut butter fan in your house, they'll be gone before you know it!
Buckeye Brownies

Buckeye Brownies, from Almost Homemade cookbook, submitted by Heather Prentice of Mars, PA

19-1/2 oz. pkg. brownie mix
2 c. powdered sugar
1/2 c. plus 6 tablespoons butter, softened and divided
8-oz. jar creamy peanut butter (yes 1 cup or 8 oz not 18 oz)
6-oz. pkg. semi-sweet chocolate chips

Prepare and bake brownie mix in a greased 13"x9" baking pan according to package directions. Let cool. Mix powdered sugar, 1/2 cup butter and peanut butter. Mix well and spread over cooled brownies. Chill for one hour. Melt together chocolate chips and remaining butter in a saucepan over low heat, stirring occasionally. Spread over brownies. Let cool; cut into squares. Makes 2 to 3 dozen.

  17. Did anyone have problems spreading the peanut butter layer?

    ReplyDelete
  18. I'm also wondering about the 8 oz jar of peanut butter. I think it should probably be 18. I'm making these as we speak so I'll let you know.

  25. I'd love this from scratch not bought cake mix. I'm gluten intolerant so these ready mixes are not an option. A lot of American recipe books and blogs use these

  29. Do you melt the 2 cups of butter when you mix the peanut butter and powdered sugar??

    ReplyDelete
  30. Hi Cierra-

1/2 c. plus 6 Tablespoons butter, softened and divided

The buter is just 1/2 cup for the first step and it is just very soft, not melted. The last 6 Tablespoons does get melted with the chocolate chips to put on top.

    Enjoy!! THese are so yummy

    1. D you even really need the butter in the peanut butter layer. An awful lot of extra calories if it really won't make a difference if it's in there.

    Hi Sandra,
I can't respond to your personally, I don't have an email add or anywhere to respond so I hope you see this message.
You don't have to use a mix for the bottom layer. Just make your own brownies from scratch and then do the two layers as directed. HOpe that helps!

  37. Do you have to let them cool before you add the chocolate chips or can they cool.once they are added? It seems like it has two cooling stages if I am reading this right. ktvsmom@gmail.com

    ReplyDelete
  38. Is the cooling step before adding the chocolate chips necessary or can it all cool at once?

    ReplyDelete
  39. Monica-

Prepare and bake brownie mix in a greased 13"x9" baking pan according to package directions. Let cool. (Just let them cool why you do the next step)

Mix powdered sugar, 1/2 cup butter and peanut butter. Mix well and spread over cooled brownies. (the brownies will be cool enough to then add the peanut butter)

Chill for one hour. (if you don't let chill then you won't be able to spread on the chocolate layer)

Melt together chocolate chips and remaining butter in a saucepan over low heat, stirring occasionally. Spread over brownies. Let cool (letting them cool before eating is up to you ...if you can wait that long. You'll see when make them. they are worth it.)

; cut into squares. Makes 2 to 3 dozen.
