Gooseberry Patch shares Zesty Cannellini Bean Salad

So easy to make, and so delicious! Submitted by Carol Lytle of Columbus, Ohio, Carol says, "Cannellini beans are also sold as white kidney beans. If you can't find them, simply substitute great Northern beans."

Zesty Cannellini Bean Salad, from Almost Homemade cookbook

2 15-oz. cans cannellini beans, drained and rinsed
1 green pepper, diced
1 red onion, sliced
1/4 c. fresh parsley, chopped
1/3 c. wine vinegar
3/4 c. olive oil
1 clove garlic, pressed
1 T. fresh chives, chopped
1/2 t. pepper

Combine beans, green pepper, onion and parsley in a large bowl. Blend together remaining ingredients and pour over bean mixture. Mix thoroughly, cover and chill well. Serves 4 to 6.
