LATE BREAKING NEWS: Our Guest Chef is celebrating her birthday today (9/9)!!! Happy Birthday Young Lady!!!
Last week, my friend, Stephanie over at Honor Crowned Crafts (Go visit her creations) posted that she was making all these treats using peaches! I was able to snag one of her recipes for YOU! I'm making these muffins this weekend!!! Thanks, Guest Chef Stephanie!
Peach Muffins
1 3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon pumpkin pie spice
(substitutions: just cinnamon, apple pie spice or your favorite blend)
1/3 cup packed brown sugar
1 cup (2 medium) peeled crushed peaches
1/2 cup plain yogurt
1 egg
1 egg white
2 tablespoons canola oil
1 teaspoon vanilla
Preheat oven to 375 degrees.
Line 12 muffins cups with paper liners, or spray with non-stick baking spray.
Mix dry ingredients and wet ingredients in separate bowls before combining them together.
Stir just until moistened.
Fill muffin cups 2/3 - 3/4 full & bake 20-25 minutes or until toothpick comes out clean.
Remove to a wire rack to cool.
Note:
*I modified a muffin recipe from the Simply Colorado Too! Cookbook to make these muffins suitable for baking in our higher altitude. You made need to do some tweaking of your own account for that. (Thanks for that tip!)
*These muffins don't come out super sweet, but are moist & fantastic warm with a little butter.
MY TAKE ON THE RECIPE: I made these tonight. I live in a much lower altitude so here are my changes.
I used 2 whole eggs instead of 1 egg and 1 egg white. I used peach yogurt vs. plain because that is what I had on

hand. I used thawed fresh frozen peaches. I tried to drain any extra liquid.
I baked it at 350 for 15 min. Perfect!
I served with honey butter. I liked them because they were not over sweet.
