Easiest Crockpot Potato Soup Recipe

We love potato soup in this house. Over the years I have made a lot of different recipes but this one is our favorite. It is also one of the easiest to make! I cook it in the crockpot but you could just as easy make it on the stove top. I make most of my soups in the crockpot. How about you?





Easiest Potato Soup


(This recipe is for a 7 quart crock pot)


Ingredients

Approx. 7 lbs potatoes, peeled and chopped
Approx. 3 quarts chicken stock or water (after adding in all the veggies add the liquid. The crockpot should be just a little over 3/4 full to cook. If needed, you can add extra stock at the end when you add the half and half.)


4 stalks celery, chopped
2 medium onions, chopped
1 Tbsp celery seed
1/4 c. chives
2 tsp pepper
2 small bags of garlic potato flakes 
1 quart half and half


Directions

1-Add all of the ingredients into the crockpot except the potato flakes and half and half.
2-Let cook on high for 6 hours.  (Can cook on low 8-10 hours) 
3-Right before serving, whisk in potato flakes and then add half and half.  Your crock pot will be very full!  


Serve! Top with cheese or Skillet Bacon Spread or both! Yummy!  This soup freezes great!

  1. I love potato soup and I think this recipe is fantastic. I tried it out in my crock pot (which doesn't get used as much as it should) and it turned out great. Thankyou

  2. While your recipe does sound pretty easy, I think the one I often use is easier. ;) I cut up 2 or 3 potatoes, just cover with water in a saucepan. Bring to a boil, reduce heat and cook for 5-7 min. or until tender, don't overcook or they will be mush. I add a tablespoon or so dried onion while the potatoes cook. Stir in one jar of alfredo sauce and 1 can of evaporated milk. Heat through. Add ham if you like. When I remember, I grate a carrot in with the potatoes and onion. I don't think it needs added salt, but salt and pepper to taste. It takes about 20 min. from start to finish. It's my boys favorite potato soup.
