Homemade Tomato Soup


Sure sign of Fall in our home is a lunch menu of Tomato soup and grilled cheese sandwiches. That is exactly what we had today. I make my own tomato soup because it is quick and easy as well as tastier than any I have eaten from a can.

Tomato Soup *quick and easy*

Ingredients

1 can or container of tomato juice
*1/2 can of milk
2 tbsp butter
1 onion, medium and chopped
1 tbsp garlic powder or fresh minced garlic
Salt & Pepper to taste
Hot Pepper (optional)
Kimchi (optional)
Crackers and Parmesan cheese to top soup

Directions

1. Pour tomato juice in 3-4 quart pan.
2. *Use the empty can and fill up half way with milk and pour into pan with tomato juice.
3. Add in onion, garlic powder.
4. Simmer until onions are soft; approx. 20 minutes.
5. Add in hot peppers or Kimchi right before serving if a spicier soup is desired.
6. Add S & P to taste.
7. Serve soup in bowl or mug. Top with Parmesan cheese and crackers. Serve with grilled cheese sandwiches!
