Ingredients
1 package Italian pork sausage links - or any healthy sausage of your choice
1 onion, large, diced
1 teaspoon olive oil
1 teaspoon red pepper flakes
2 teaspoons garlic powder
15 oz can petite diced tomatoes
32 oz chicken broth
2- 15 oz cans great northern beans
2 packages frozen spinach, thawed
Garnish: grated Parmesan cheese
1 box small shell pasta-optional
crackers
Directions
1) If the sausage is in a casting then remove it. Put in crock pot with tomatoes and onions. Cook for 3 hours on high.
2) Add in all the other ingredients except the cheese and pasta.
3) Cook on high for 1 hour.
4) Serve with pasta or crackers. Top each bowl with Parmesan cheese.
Kitchen Notes
Cook on Stovetop Variation:
The original recipe wanted you to brown the meat on the stovetop and then add in rest of the ingredients (I made a few adjustments to the ingredients) and cook on stovetop, simmering for 2-3 hours.
The pasta & crackers are optional and add in your pot or let individuals add it which is what we do.

ReplyDeleteI'm making the Bean and Sausage Soup but not sure when I'm supposed to add the pasta. Or is it supposed to be cooked separate and just added at the end?

ReplyDeleteComment #4 Anonymous- the pasta, just like the crackers are add as you want! :) The pasta isn't necessary but there if someone wants it. You can add the pasta to our soup pot if you want. I never do.

ReplyDeleteI made this today for my lunch and it is wonderful! The only change I made was to use turkey italian sausage and I fried it up in a pan first to drain the grease. Such fabulous aromas filled my house! Sooo good! Thank you!
