The BLT Pizza (photo at top) was by far our favorite item that we made. It for sure will go into my regular cooking schedule.
BLT Pizza
Ingredients
8 oz tube refrigerated crescent rolls
3/4 c. mayonnaise
1 T. Dijon mustard
9 slices bacon, crisply cooked and crumbled
8 oz pkg. shredded Cheddar cheese
2 green onions, finely chopped
2-3 c. lettuce, shredded
3 roma tomatoes, seeded and chopped
Directions
Roll out crescent rolls onto a lightly grease baking sheet, pinching seams to seal. Bake at 375 degrees for 12-15 minutes, until lightly golden. Remove from oven; cool. In a small bowl, combine mayonnaise and mustard. Spread over crescent rolls Top with remaining ingredients. Cut into squares. Makes 10-12 servings.
We must have been in a bacon mood when going through this Simple Shortcut cookbook! I also made Ranch & Bacon Pasta Salad. It is another keeper in my recipe box!
Ranch & Bacon Pasta Salad
Ingredients
8 oz pkg. rotini pasta, uncooked
1 1/2 c. mayonnaise
1 T. ranch salad dressing mix
1 T. bacon bits (sorry we used 4 cooked and crumbled real bacon!!!)
3 green onions, chopped
Directions
Cook pasta according to package directions; drain and rinse with cold water. In a large bowl, mix remaining ingredients until well blended. Fold in pasta. Cover and chill before serving. Serves 4.

Simple Shortcut Cookbook review: True to the Gooseberry Patch tradition this is another tried & true tasty Cookbook. All of the recipes are very simple to make in no time. I could not believe how many of the recipes were new. I loved some of the fun names, too!
These recipes were created by smart moms. The book is full of almost homemade, short cuts, advanced prep ideas and mom-test tips and tricks! Here are the chapters and some of my new favorite recipes. I will post more recipes soon from this book.

ReplyDeleteMy kitchen tip is- if you have extra celery, don't throw it away. Chop it up, put it in a baggie and freeze it. That way you always have it on hand for soups, stews, etc.

ReplyDeletePlace a slice of apple in hardened brown sugar to soften it back up.
ReplyDeleteMy easy recipe is dirty rice using Zatarain's dirty rice mix. Just brown some ground beef and add to the cooked rice mix. Serve with a salad and garlic bread. I can have this meal ready in about 30-40 minutes.

I love to put leftover coffee in ice cube trays and make iced coffee on a warm day :)

use lemon juice to keep things from turning brown
ReplyDeleteAlways keep a bowl of basic salad such as lettuce with shreded carrots in the fridge. You can always add other vegies at the spur of the moment. But keeping the salad on hand, cuts the time down to make a complete salad and adds to the meal in case you have 'sudden' guests. marie

My tip is to make bananas last longer separate them instead of keeping them in a bunch.
