Tips to spice up your parties this Spring with Farm Rich

Spring is a time for parties! It seems that once we get through St. Patrick's Day there are parties happening all over the place. We have Easter, Baby Showers, Bridal Shower, School Graduation Parties, Confirmation Parties, Mother's Day, Father's Day and Birthdays. Did I miss any? Oh wait! Let's not forget about Cinco de Mayo! Are you hosting any of these parties?


We will be hosting and attending parties in almost all of the above festivities this year. One of my favorite is Cinco de Mayo. I know that seems really crazy since it is just the 5th of May and not a major milestone like high school graduation but I love celebrating it! We love spicy Mexican food in this household and eat some type of Mexican food at least once every 1 1/2 weeks. Do you have a favorite celebration? Which one do you like most?


I just recently found out about the Queso Cheese Bites from Farm Rich. Have you head of them? Queso cheese seems to be all the rage where we live. Everyone is wanting to make the Mexican white cheese dip that you get in restaurants. Farm Rich is on this trend and created these new, Queso Cheese Bites. These little bites aren't too cool or too hot! They are spiced just right. We are going to try these for our Cinco de Mayo party.
Cinco de Mayo Spicy Party tips

1) Grab a bag or two of the Queso Cheese Bites from Farm Rich and serve it along side a big bowl of pico de gallo. 


Pico De Gallo

6 roma tomatoes, chopped o
r food processed
4-5 springs 
cilantro, chopped
1 c. onion, chopped
2 tsp lemon
2 cloves garlic, chopped 
1/2 c. jicama, chopped (optional)
1 tsp salt
2 tsp Mrs Dash Fiesta Lime seasoning

Mix together and enjoy with chips and a margarita! 
If you hand chop you will have a more coarse sauce.



2) Plan and set up an easy to make tostada bar. This will allow your guest to make it their own way. Here is our easy recipe. You can make the shells up ahead of time or buy pre made tostada shells. 


Chicken Tostadas

Makes 4

4 8-inch round flour tortillas
3/4 cup coarsely shredded pepper jack cheese (we also used shredded taco cheese)
1 bag (8 ounces) shredded lettuce salad blend
2 cups shredded cooked chicken (cook and season with packaged taco seasoning)
1/4 cup fresh cilantro leaves, coarsely chopped
1 cup jarred green salsa or any of your favorite salsa
1 large tomato, cored and diced
1/4 cup sour cream
avocado- sliced
jalapeƱos-sliced
olives-sliced

For the Tostada:

Preheat oven to 400°F. Place the tortillas on a baking sheet and evenly cover with the shredded cheese. Bake until the cheese is melted and the tortilla is crunchy, about 8-12 minutes. The long you cook, the crunchier the shell. Remove from the oven and transfer to serving plates.

In a large salad bowl toss together the salad blend, chicken, and cilantro.
Put all the other toppings out so the guest can make it their way.


3) Drinks- Buy the fun Mexican soda in your local grocery and put them out on the buffet with fun glasses. 


Let the guest serve themselves. Include skewers and various fresh cut fruits so they can make their own fruit kabob to stick in their drink. If this is an adult party and your want to serve margaritas, check out my Happy Margarita recipe. It is my all time favorite! 


4) Dessert- Serve Fried Ice Cream.


In college I remember eating fried ice cream at our favorite local restaurant. I've personally NEVER made it but it is on our menu for this Cinco de Mayo. I found a yummy recipe on Pinterest that I plan on trying. Check it out on my Mexican Fiesta Board. Besides fried ice cream, there are recipes on there for churro bites and mexican corn cake. Any of them would make a great ending to this meal!
