National Peanut Butter Cookie Day!

Don't you just love celebrating National Food Holidays? Today is National Peanut Butter Cookie Day! I hope you enjoy this tasty day.

Here is a recipe for the easiest peanut butter cookie, ever. I usually get about 24 cookies out of a batch. 

Peanut Butter Cookies

1 egg
1 cup plus 2-3 Tbsp sugar
1 cup of peanut butter, creamy or chunky

Preheat oven to 350 degrees. Mix ingredients. Spoon out onto cookie sheet.  Lightly smash down the cookies with fork tines, rotate fork 180 degrees and do it again. Sprinkle lightly with sugar.   Bake 7-10 minutes (until they are not shiny) Let cool for 1 minute and then put on cooling rack. 

*Some times I'll toss in chocolate chips or nuts to my cookies. How about you?

  1. I am tempted to make some myself...do these actually have a cookie texture? I know they don't normally call for flour, but this seems too simple ;-)

  2. I missed PB Cookie day!? Ohh NO!
    I have a favorite recipe, it is THEE BEST recipe ever.
    Here it is:
    1 1/2C. PB (I use organic crunchy)
    3/4 C. Butter
    3/4 C. Shortening
    3 3/4 C. Brown Sugar
    3 Eggs
    3 t. Vanilla
    3 C. Whole Wheat Flour (I use white bleached, but this is what the recipe says)
    3 t. Baking Powder
    1 1/2 t. Salt
    3 C. Rolled Oats

    Mix all and bake at 350 degrees.

    These are the moistest PB cookies I have ever had after they are baked and setting the next day or two days. So yummy!

  3. 350 degrees C?! My oven doesn't even go up that high, I wonder if you mean F and therefore 170 ish C, but this isnt stated :(
