Slow Cooker Pot Roast Sliders
(Six Sisters' Stuff cookbook)

*My adapted recipe makes this with chicken or roast beef. The below spice mixture works with either meat and differs from Six Sisters' Stuff.

Ingredients

1 3-4 lb beef roast
1 cup water
1 cup salsa
1 envelope onion soup mix
1 envelope au jus mix
12 dinner rolls or other slider rolls
Sliced Swiss cheese - 1 piece per slider
Creamy Chipotle Sauce

Whisk together water; salsa and seasoning packets. Place roast in slow cooker. Pour seasoning mixture over roast. Cook on low 8 to 10 hours, or high 4-5 hours. Shred beef. Cut each roll in half and place on a baking sheet. Place a slice of Swiss cheese on the bottom half of each roll. Place baking sheet in oven with broiler on low. Broil 1-2 minutes or until edges of the rolls ar golden and cheese has melted. (Be sure to watch them closely so they don't burn!) Remove baking sheet from oven.

Place a spoonful of shredded beef on the bottom half of the tasted roll. Spread Creamy Chipotle sauce on the top half.

Makes 12 sliders.

Kitchen Note: These are a tad messy! If you need to cut your sodium then use 1 container of dry onions in the seasoning aisle instead of the onion soup mix with same results and less salt. I made with same recipe using chicken and a few variations. Click over to the Crockpot Chicken Sliders for that recipe.

  1. I've been reading a lot about these books. I probably wouldn't make this recipe, though. I rarely eat beef these days.

  4. How many ounces of dehydrated onion? We rarely eat beef, so I'd make the chicken variety, unless I found some beef on a great sale! The creamy chipotle sauce had my husband drooling when I read him the ingredients. :) I'd swap the sour cream for non-fat plain greek yogurt.

  5. Hi Donna- I'm not at home to look but I buy those Dry Onions ALL THE TIME and have no clue what size. They are in the spice aisle. Honestly I always buy the Good Seasons generic brand at Walmart or Dollar General and they are $.50 a container. They are in with the spices near the Onion Salt. If you can't find the generic brand then you wlll have to buy the Walmart or name brand which cost between $1.50-$3.00. It kills me to pay more than the $.50 so I usually have 5 on hand for cooking.

Oh and I have used the non fat plain greek yogurt and it works great. Anytime a recipe calls for S cream I try and substitute without letting my kids know. They say they don't like it but if I don't tell them then they don't even know. duh!
