{Mexican Recipes} "Deep Fried" Ice Cream for Cinco de Mayo

Cinco de Mayo is just around the corner. Do you have any favorite Mexican recipes? One of our favorite is deep fried ice cream. This recipe reminds us of a dessert served in one of our favorite Mexican restaurants. 

"Deep Fried" Ice Cream

Ingredients

4 c. bite size crispy cinnamon rice cereal squares, crushed
1 c. mini semi sweet chocolate chips
2 pts. vanilla ice cream
1/2 lb. fresh sliced strawberries, hulled & sliced
Garnish: honey, whipped cream

Directions
Combine cereal and chocolate chips in a bowl; set aside. Scoop 8 balls of ice cream with an ice cream scoop. Quickly roll ice cream balls in cereal mixture; mound balls in a 9" pie plate. Coer; freeze at least one hour until firm. At serving time, top ice cream balls with strawberries. Drizzle with honey and dollop with whipped cream. Makes 8 servings.

Kitchen Notes: I made this on a whim and used what I had on hand. We omitted the chocolate chips and strawberries. Instead of honey we used caramel sundae syrup and topped with a cherry. All easy changes and this is now a new go to recipe when we need a sweet mexican treat!

FYI this isn't an actual fried recipe. If you have ever had this in a restaurant, they called it fried or deep fried but it isn't! The coating on the outside of the ice cream makes you think it is fried.

    You don't actually deep fry it. If you ever had this ice cream in a restaurant, they called it deep fried but it isn't. The crust that you create makes you think it is fried. I will add that to the kitchen notes incase it confuses someone else. Thanks for letting me know your question!!!

  6. I've used the cinnamon toast crunch cereal before and it's good also. When you have those crumbs in the bottom of a bag/box of cereal, just sprinkle on for a quick taste... With honey of course! :-)

  7. This is also good using the kid cereal, "cinnamon Toast Crunch". I LOVE this. Restaurant in college always had it and served it in a tortilla bowl.... YUM! Thanks for having this recipe. Haven't had in a while.

  8. Actually deep fried ice cream is just that, deep fried. This is not real deep fried ice cream, it's trying to mimic deep fried ice cream without deep frying it.
    And yes you can deep fry ice cream, I've done it, and it's amazing. Still want to try this one though, I like spin off recipes.

  9. Thanks Anonymous for stopping in. This recipe is like the restaurant Mexican Fried Ice Cream and it isn't fried either. They called it fried because of the crispy coating but it isn't. My recipe clearly states that it isn't really fried.
