I'm an Early Bird Reviewer for Gooseberry Patch. I love getting early sneak peeks at their cookbooks before they are for sale! This allows me to post a review of some of their recipes and offer one as a giveaway to one of you!
This cookbook is unlike any of their other cookbooks that I have reviewed. Instead of a particular food or event theme this book is based on a fat cats love of food! The dedication page states, "To fans of Gooseberry Patch and Garfield everywhere...brought together by a common love of yummy homestyle food!" You will find quite a few pizza and lasagna recipes in this book!

Ingredients
2 lb ground beef
2 eggs, beaten
1/2 t. salt
3/4 c. quick-cooking oats, uncooked
1 1/3 c. chili sauce, divided
1/2 c. grape jelly
Directions
In a large bowl, combine beef, eggs, salt, oats and 1/3 c. chili sauce. Mix well with your hands; form into one-inch balls. Place in an ungreased shallow 13"x9" baking pan. Bake uncovered at 400 degrees for 15-17 minutes, until meatballs are browned; drain.
Meanwhile, combine jelly and remaining sauce in a large saucepan over medium heat. Cover and cook, stirring occasionally, for about 10 minutes, until mixture is well blended. Add meatballs; simmer until heated through. Meatballs may be kept warm in a slow cooker while serving. Makes about 5 dozen.
Kitchen Tips: These are great to make sub sandwiches. Make them ahead of time and wrap in aluminum foil to keep warm.
Chocolatey Moo Cow Shake
Ingredients
2 c. milk
1 scoop vanilla ice cream
1 scoop chocolate ice cream
3 T. chocolate syrup
optional: crushed ice
Directions
Combine all ingredients except ice in a blender; process until smooth. Pour into 2 glass over ice, if desired. Serve immediately. Makes 2 servings.
Kitchen note- We crushed our ice with the shake.

These are always great cookbooks and who doesn't love Garfield.

1 15 oz can tomato sauce
1 15 oz can refried beans
1 pound ground beef
packet of taco seasoning
Shredded cheddar cheese (as much as you desire)
Corn tortilla chips
Directions:
With seasonings added in, brown the ground beef. Set a 1/2 cup of the tomato sauce aside, and add the rest to the ground beef. Simmer until beef is tender, and in a separate container, mix the 1/2 cup tomato sauce with the beans. Next, layer the tortilla chips (crushed) on the bottom of an 8×8″ dish. Then add the ground beef, beans, and more chips on top. Put in stove at 350 degrees for 25 mins. Add cheese, and place back in stove until cheese is melted. Let cool for a few minutes, and enjoy!

2 jars pizza sauce
1 pkg. pepperoni- cut in half
1 pound Italian sausage- cooked and crumbled
1 cup shredded cheddar
2 cups shredded mozzarella- divided
Mix all but one cup of mozzarella together and pour into a greased 13 x 9 inch baking dish. Bake at 350 degrees for 30-45 minutes. For the last 5-10 minutes add last cup of mozzarella to melt.

Crust
1 (8 oz) package of full fat cream cheese, room temperature
2 eggs
1/4 tsp ground black pepper
1 tsp garlic powder
1/4 cup grated parmesan cheese
Topping
1/2 cup pizza sauce
1 1/2 cups shredded mozzarella cheese
toppings - pepperoni, ham, sausage, mushrooms, peppers
Garlic powder
Preheat oven to 350.
Lightly spay a 9×13 baking dish with cooking spray. With a handheld mixer, mix cream cheese, eggs,
pepper, garlic powder and parmesan cheese until combined. Spread into baking dish. Bake for 12-15
minutes, our until golden brown. Allow crust to cool for 10 minutes.
Spread pizza sauce on crust. Top with cheese and toppings. Sprinkle pizza with garlic powder. Bake
8-10 minutes, until cheese is melted.

I only like lasagna that I make myself. I boil the noodles. In a bowl I mix a 32 oz container of cottage cheese, a bag of (3 cups) mozzerella. I make my own sauce from a semi homemade recipe( mix can of spaghetti sauce, can of tomatoes, can of tomato sauce and 2 spoons of italian seasoning) layer the noodles, cheese mix and sauce. Bake 35 minutes at 400 degrees.

A very easy and yummy lasagna recipe comes from Kraft Foods - my favorite - even better than my homemade or my mother's (who is 100% Italian):
ReplyDeleteSimply Lasagna
1 lb. ground beef
2-1/2 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
1 container (15 oz.) POLLY-O Natural Part Skim Ricotta Cheese
1/2 cup KRAFT Grated Parmesan Cheese, divided
1/4 cup chopped fresh parsley
1 egg, beaten
1 jar (24 oz.) spaghetti sauce
1 cup water
12 lasagna noodles, uncooked
make it
HEAT oven to 350°F.
BROWN meat in large skillet on medium-high heat. Meanwhile, mix 1-1/4 cups mozzarella, ricotta, 1/4 cup Parmesan, parsley and egg until blended.
DRAIN meat; return to skillet. Stir in spaghetti sauce. Add 1 cup water to empty sauce jar; cover with lid and shake well. Add to meat mixture; stir until blended. Spread 1 cup meat sauce onto bottom of 13x9-inch baking dish; top with layers of 3 lasagna noodles, 1/3 of the ricotta cheese mixture and 1 cup meat sauce. Repeat layers twice. Top with remaining noodles, meat sauce and cheeses. Cover with foil sprayed with cooking spray.
BAKE 1 hour or until heated through, removing foil after 45 min. Let stand 15 min. before cutting to serve.

With tomato season in full swing, I've been canning my own stewed tomatoes. They are wonderful to add to a pre-made spaghetti sauce for a chunkier sauce or just add on top the hot spaghetti.

I had a cat named Peanut (RIP) who loved spaghetti sauce! He would smell when we ate something with spaghetti sauce and would literally sit and wait until we were finished so he could lick the plate clean.
