Bumbleberry Summer Sundae Recipe

Alas, there is no such berry as a bumbleberry! Bumbleberry pie is a mixed-berry pie usually made of at least three kinds of berries. This refreshing re-invention of the tangy, juicy dessert will become your favorite summer treat. 

Bumbleberry Summer Sundae
Serves 6

Ingredients

3 cups plus 3/4 cup mixed berries, well washed and divided (any combination of strawberries hulled and quartered, blueberries, raspberries, blackberries halved)
4 tablespoons granulated sugar, divided in half
2 teaspoon fresh lemon juice
1 pinch coarse salt
1 cup heavy cream
1 pint vanilla ice cream or vanilla frozen yogurt
1 pint raspberry, strawberry, or blackberry sorbet
6 graham crackers, crushed
2 tablespoons fresh lemon zest

Directions

1. In medium saucepan, heat 1c. mixed berries, 2 tbsp sugar, and lemon juice over medium heat, until blueberries begin to burst and other berries break down, about 10 minutes. Remove from heat; stir in the pinch of salt.

2. Place berry mixture in a blender; puree until smooth. Return sauce to saucepan; add 2 cups berries. Stir well to combine; allow to cool slightly.

3. Meanwhile, in medium bowl, crush 3/4 cup berries with remaining 2 tablespoons sugar using a fork, until slightly chunky and loose.

4. In large bowl (using whisk or hand-held mixer) or stand mixer, beat cream at medium speed until soft peaks form. Gently fold crushed berry mixture into whipped cream. Refrigerate until ready to serve.

5. To serve: spoon 2 tbsp of sauce into each of 6 parfait glasses, rocks glasses, or small mason jars. Top with a scoop of vanilla ice cream, a sprinkling of crushed graham crackers, and a pinch of lemon zest. Then, add a scoop of the fruit sorbet and another 2 tbsp of sauce. Top with a dollop of whipped cream, and finish with a sprinkling of the graham crackers and another pinch of zest. Serve immediately.

Kitchen Notes: This is a mouthwatering dessert. I wanted to put that sauce on everything!!! Okay, maybe just pancakes, waffles, greek yogurt, and regular ice cream/frozen yogurt! Mmmmmm. Thanks to Donna & Co for making this recipe!

We love creating recipes like this one that is easy and has many uses. Not only can this be made into a sundae, the topping can be added on top of pancakes, waffles, greek yogurt and any of your favorite ice cream or frozen yogurt dishes! 

Summer is a great time to get out all of the mason jars and serve drinks and desserts to your family and guest. Before using the mason jars and silverware for your dessert, give them a run through the dishwasher using the Cascade Platinum pacs. This will give your serving dishes added sparkle and shine. 


Since we have been using Cascade (click to find out more about my results), our dishes look so clean!  All the built up water spots and hard water stains are now off of all of my every day dishes and silverware. I always struggled when guest would come over to make sure to use the most clear dishes and glasses. My dishes were clean but didn't always look that way. Now I do not need to be careful because every silverware, glass and dish is clean and clear. 

Since I do blog about food, I'm always taking pictures of my dishes. In the past I would have to be careful what I used to plate and photograph the food due to the hard water stains. Now, the dishes are shiny and clear and I can use whatever I want! Presentation for food photographs and serving to family and friends is very important to me.
