Yes my family loves Amish Friendship Bread. I have a Friendship Bread Starter that is over 3 years old which I take from every time I bake or need to share with others. When my starter gets down to 1 cup or so, I feed it. This Amish Friendship Bread Pancake recipe can be found all over the internet. I tweaked it to fit our needs.
Amish Friendship Bread PancakesIngredients
2 cups Amish Friendship Bread Starter
1 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1-3 tablespoons oil
1/2 cup milk/half & half and up to 1/4 cup more if needed to thin out
1 egg
1 teaspoon vanilla
1/2 teaspoon of cinnamon, nutmeg, all spice or pumpkin spice.
Directions
1. Set an electric skillet or stove top to medium heat when batter is ready.
2. Combine dry ingredients in a bowl, mix.
3. Combine wet ingredients in a bowl, mix.
4. Add wet ingredients to dry until just combined. Do by hand or use a mixer. I use a mixer.
5. Spoon batter onto the greased skittle and cook until bubbles appear and then flip. These cook really quick!
Kitchen Notes
- The pancakes will look a little darker than regular pancakes. That is because of the sugar in the batter. Keep heat to medium and cook slowly to decrease the darkness. We've found that an electric skillet works best but we will cook on the stove top.
- We do add fresh or thawed blueberries, strawberries, or bananas once the batter is added to the skillet- add right before flipping pancakes over.
- Kids prefer mini chocolate chips instead of the fruit. Go figure!
- Recipe make 24 small sized pancakes.
