- Serves a Crowd-Maryland Crab Cakes, Grilled Sausage & Veggie Packs, Coconut Mahi-Mahi, Grilled Tilapia with Pineapple Salsa, Mom's Chicken Riggies, Pineapple Pudding
Family-Favorite Pork Tacos
Ingredients
2 tsp. oil
1-lb. pork tenderloin, cubed
1 tsp. ground cumin
2 cloves garlic, minced
1 c. green or red salsa
Optional 1/2 c. fresh cilantro, chopped
8 10 inch corn tortillas, warmed
Garnish: shredded lettuce, diced tomatoes, sliced avocados, sliced black olives, sour cream, shredded Cheddar cheese
Directions
-Heat oil in a skillet over med. high heat and add pork and cumin. Cook until golden on all sides and pork is no longer pink in the center, 8-10 min.
-Add garlic and cook for 1 minute; drain.
-Stir in salsa and heat through; stir in cilantro.
-Using 2 forks, shred pork.
-Fill warm tortillas with pork mixture; garnish as desired. Serves 4.
Kitchen Notes-
For this recipe, we used flour tortillas and included spinach and sliced jalapeƱos as garnish. Easy recipe to cook and make changes that work for your family.
Ingredients
3-6 cloves garlic, chopped
1/8 t. red pepper flakes
1/3 c. olive oil
2 15oz cans diced tomatoes, drained
1/8 t. dried oregano
1/4 c. dried parsley
3.8 oz can chopped black olives, drained
8 oz spaghetti, cooked
Garnish: grated Parmesan cheese
Directions
-In a skillet over medium heat, saute garlic and red pepper flakes in oil until golden.
-Add tomatoes and oregano.
-Reduce heat to low and simmer for 20 minutes, stirring occasionally.
-Stir in parsley and olives; cook for another 2 minutes.
-Add pasta to skillet; toss to mix and transfer to a large serving bowl.
-Sprinkle with cheese; Makes 4.
Kitchen Notes-
-We all loved this recipe. I did add in 1 lb of ground turkey to the sauce for extra protein! It was a sure hit and a new family favorite.
Taco in a Pan
Ingredients
1 lb ground beef
1/2 c. onion, chopped
1/2 c. green peppers, chopped
2 c. water
1 1/4 oz pkg taco seasoning mix
1 1/2 c. instant rice, uncooked
1 c. salsa or to taste
1 c. shredded Colby Jack cheese
1 tomato, chopped
Optional: 1 c. sliced black olives
Garnish: crushed nacho flavored tortilla chips
Directions
-Brown beef, onion and green peppers in a skillet over medium heat; drain.
-Stir water and taco seasoning into beef mixture; bring to boil and stir in rice.
-Cover and cook 3-5 minutes until rice is tender.
-Sprinkle salsa and cheese over all.
-Remove from heat; cover and let stand until cheese melts.
-Top with tomatoes and olives.
-Garnish with chips. Serves 4-6
Kitchen Notes-
-This is a great recipe as is. It works great as a layered dish by letting the taco rice mixture cool. Once cool, layer the meat with the other ingredients, including a can of pinto beans. Serve in a large container with more taco chips.

I make a mean skillet lasagna that is an all time family favorite. Pretty much just like regular lasagna but all mixed in and I use bowtie pasta.

I like chicken patties (cut up); stirred up with spaghetti sauce, and spaghetti noodles; topped with shredded mozzarella cheese; then cooked until cheese is melted. Thanks for the chance to enter.

ReplyDeleteI love skillet dinners. I live in a warm climate so anytime I do not have to turn on my oven is wonderful. I make an excellent beef stronoff.
ReplyDeleteI coat chicken in egg/milk, then in ritz crackers or cornflakes and Parmesan cheese...and bake til golden brown and chicken is done.

I like a One-pot pasta meal that is very versatile... pasta, cream of mushroom or chicken soup, cheese, garlic, onions/onion powder, and whatever leftover meat & veggies one has on hand... if you cook the pasta in an equal amount of water, the water is almost gone by the time the pasta is cooked (although I add extra water if I'm cooking veggies with the pasta). Just have to watch it for sticking. :)
