Best Buttercream Frosting Recipe

For over 20 years I've been making this same buttercream frosting for all or our birthday cakes and cupcakes. It isn't super sweet and of course and has a light butter taste which melts in your mouth. Do you have any favorite frosting favorites which you use for your dessert recipes?? If so please share in the comments! 
Best Buttercream Frosting

Ingredients

1 stick of butter
1/2 cup vegetable shortening
2 teaspoons vanilla
4 cups powdered sugar
3 tablespoons milk
1 teaspoon butter flavoring (we buy Wilton brand) and it is optional

Directions

1-Cream together butter, shortening, vanilla and butter flavoring with electric mixer
2-Slowing add in the powdered sugar and keep mixing. Add 1 cup of powdered sugar, mix, then 1 tablespoon of milk, mix until all used up.
3-Once it is all mixed together I mix it for another 2 minutes. 

Make 3 cups of frosting

Kitchen notes
-When I want a light chocolate flavor I add in 1/4-1/2 cup of cocoa powder. 
This can be mixed by hand but it takes way too long in my opinion. Make due with what you have.
-This frosting is used to spread on cupcakes, cakes or cookies. It also works great to add in food coloring (I use Wilton gels) and pipe with frosting tips. It air dries great.

Chili Cheese Nachos

Ingredients

Any Chili recipe (I use Easiest Chili Recipe EVER)
Large dip size Fritos
Shredded Cheddar cheese

Directions

1-Make Chili
2-Add Fritos to a plate
3-Add some shredded cheese
4-Scoop on chili without the juice
5-Add on shredded cheese, jalapeƱos, black olives, onions,etc
6-Eat

Happy National Coffee Day and 10 tips on Getting the Most Out of Your Beans

Happy National Coffee Day! It is my most favorite day of the year, well almost! I'm a huge coffee fan. I have coffee every day, no matter what! Almost everyone in my family are as addicted as I am. How about you? Are you a huge coffee fan? Here are 10 Tips to Get the Most out of your Beans from my friends at KRUPS!


Tip 1 - Buy Better Beans: No, we don’t just mean the more expensive bag in the coffee aisle. Fresher beans equal better coffee, so look to smaller, independent coffee shops that stock beans that are roasted on the premises or nearby. Quality establishments will stamp your coffee with its roasting date, so you know you exactly how fresh your coffee is. Coffee taste peaks from 1-3 days after the roast, and if stored properly will last up to two weeks.

Tip 2 – Store Correctly: Contrary to popular belief, you should never store beans in a freezer or a refrigerator. Coffee actually absorbs aromas from surrounding foods, and freezing the coffee will alter oil properties affecting taste. KRUPS recommends transferring whole bean coffee into an air tight container after opening, and storing in a cool, dry and dark place.

Tip 3 – Do it Yourself: Freshly ground coffee makes a world of difference, as beans start losing flavor immediately upon reaching the grinder. Grind beans yourself right before you brew, and pay attention to the coarseness of the beans, as different filter shapes require different textures. For example, mesh filters require a coarser grind, while paper filters require a finer grind, and espresso requires grinds that are almost of a sugar-type consistency for optimum flavor.

Tip 4 – One for Good Luck: KRUPS recommends measuring ground coffee out to equal one tablespoon of grinds per 5 oz of water, plus one heaping scoop at the end for good measure.

Tip 5 – Water Works: The quality of the water being used is extremely important. KRUPS recommends using cold, filtered water, especially if your tap water is not of good quality or emits a strong odor or taste.  Since coffee is 98% water,  the taste of the water will come through in the brew.

Tip 6 – Don’t Hesitate: Brewed coffee should be enjoyed immediately, as it will begin to lose its optimal taste mere moments after brewing. Coffee should never be left on an electric burner plate for longer than 15 minutes, or it will develop a stale, burnt taste. If not served immediately, coffee should be poured into insulated containers and used within the hour. KRUPS insulated internal tank system on the Cup on Request machine avoids this issue, and the brand’s Thermal Carafe Machines also eliminate the need for transfer, as the pot itself can be removed from the plate immediately after brewing. As a rule of thumb when using Thermal Carafes, KRUPS recommends running hot water in the carafe prior to brewing, otherwise, the cold stainless steel will cool down the liquid much too quickly.

Tip 7 – Become a Coffee Connoisseur: Much like a fine wine, coffee should be enjoyed with all the senses. Take note of acidity, aroma, bitterness, body and nuttiness. Tip 8 - Quick Sips: KRUPS recommends drinking smaller, more frequent servings (about 1/4 cup every hour).  Research shows that caffeine works best in small, frequent doses, and a large cup can actually lead to a crash.

Tip 9 - Butt Out: Studies show that caffeine combined with Nicotine intake significantly reduces caffeine's staying power.
Nicotine suppresses the effect of caffeine, cutting some of its stimulating properties in half.

Tip 10 – Cat Nap: Since it takes about 20 minutes to feel the effects of coffee, and sleep is the only solution to really offer a feeling of restfulness, the best way to get that second wind is by drinking a cup, then taking a quick nap while the caffeine sets in. You’ll wake up feeling alert and refreshed!

Make Every Day a BIG DAY with Frosted Mini Wheats #PCBigDay

Sometimes our family gets in a rut. We do the same things over and over, just go about doing every day life that we forget to stop and really look at what everyone has going on. Does your family do this? Every day is not full of new and exciting adventures over at our home but I have found that every day is a big day in the life of a teenager. There is always something going on from breakfast to supper all the way to bedtime! This is a sponsored post and my own tasty opinions are expressed here.

No matter what we have going on, I have always encouraged my girls to start each day as a new day. If everything didn't go as planned yesterday, today is a new day. Treat today as a BIG DAY and make the most of it. The best way to do this new start of the day is to eat breakfast. I'm a huge believer that a breakfast can get you focused from the beginning of the day. One of our family favorite breakfast foods is a yummy bowl of Kellogg's Frosted Mini Wheats with milk. We love the crunchy, slightly sweet Frosted Mini Wheats! These little mini wheats pack a powerful punch of fiber and whole grains. What a great way to kick off the day with a full tummy!

Besides every day being a BIG DAY and a chance to start fresh, there really are days that are extra special. Just recently my 14 year old had a BIG DAY which she kicked her way into testing and receiving her 2nd Degree Black Belt in Tae Kwon Do. This was a huge BIG DAY for her and our entire family is super proud of her hard work and dedication to get this far in her training.

How do you tackle each day with your family? Do you think each day can be a BIG DAY? Now that summer is over and we are headed into fall take time to focus on something special each day with your kids.

10 Tips to Make Every Day a Big Day

  • Send a lunch note or sneak a note into your kids backpack to give encouragement for something they have going on that day. 
  • Eat breakfast together as a family. 
  • Get the kids involved in family meal planning and let them pick a meal each week they want to eat. Let them help you in the kitchen to prepare the meal.
  • Have a special plate that someone gets each day. Have it on a rotating schedule so everyone gets a turn to have the special plate.
  • For those kids with phones, text them every day a special message.
  • At dinner asking everyone to share something that they did at school.
  • As a parent, if you have quick errands to run always make sure you take a kids with you. Rotate who goes but use that one on one time to make your kid feel special.
  • Make an effort to do something physical every day with the kids. Good idea would be to go on a 15 minute walk after dinner.
  • Go through the backpack every day. Don't miss anything your kids brought home.
  • Keep a chore chart each week and let the kids help pick their chores. It is important that each kids feel a part of the family and contributes daily.

{Healthy Recipes} Sweet Potato Egg Breakfast Bites #sponsored #BrownRiceTriscuit

I eat a healthy breakfast just about every morning. I do get in a rut and look for wholesome alternatives to jazz up my meal. I'm thrilled to report that the new line of Brown Rice Triscuits gave me the needed change of pace to my breakfast meal and I created two new healthy recipes.

Triscuits added brown rice to their wheat crackers along with real food ingredients such as sweet potatoes and red beans. These crackers are baked with 100% whole grain brown rice and wheat, no high fructose corn syrup, hydrogenated oil, cholesterol or artificial flavors. Ok but I know you are wondering do they taste good. I have to say 100% yes they taste even better than just "good." These crackers are perfect for breakfast, lunch, dinner and snack time! My family tried them and love them no matter the time of the day.

We tried the Brown Rice Triscuits baked with Sweet Potato seasoned with Roasted Sweet Onion, Brown Rice Triscuit seasoned with Sea Salt & Black Pepper and Brown Rice Triscuit baked with Red Bean seasoned with Roasted Red Pepper. At first I was hesitant to try the whole wheat healthy cracker with breakfast but the Sweet Potato totally rocked my eggs. 

Brown Rice Triscuit Sweet Potato Spinach & Egg Breakfast Bites

Ingredients

1 egg
1/4-1/2 teaspoon butter
1 handful of fresh spinach
pinch of black pepper
3-6 Brown Rice Triscuits baked with Sweet Potato seasoned with Roasted Sweet Onion or any of their other Brown Rice varieties

Directions

1-Add butter to hot pan and toss in spinach. Cook for 1 minute.
2-Add in egg and give it a quick scramble.
3-Add eggs to Triscuits and top with black pepper

Brown Rice Triscuits Sweet Potato Spinach, Egg & Tomato Bites

Ingredients

1 egg
1/4-1/2 teaspoon butter
1 handful of fresh spinach
1/2 of cherry or grape tomato for each bite
Parmesan cheese
3-6 Brown Rice Triscuits baked with Sweet Potato seasoned with Roasted Sweet Onion or any of their other Brown Rice varieties

Directions

1-Add butter to hot pan and toss in spinach. Cook for 1 minute.
2-Add in egg and give it a quick scramble.
3-Add eggs to Triscuits and sprinkle on Parmesan cheese.
4-Top with 1/2 of tomato

Besides breakfast, we used our new Triscuits to eat plain as a healthy snack and served with tuna fish salad. Tuna fish salad is eaten around here for lunch or dinner. Everyone loves it and the Triscuits added a perfect healthy crunchy bite to the tuna fish which would normally be eaten with carrots, plain round crackers or on sandwich bread.

    {Warm Drinks} Hot Vanilla Nightcap

    I love the beauty of autumn but not so much the chilly nights. I know that this also means winter with full on chill is knocking at my door. Warm drinks such as this hot vanilla nightcap is a good one to sip on at night to take the mind off of the chill in the air.

    Hot Vanilla Nightcap 

    Ingredients

    1 c. low-fat milk, almond milk, Silk,etc
    1 t. vanilla extract
    1/2 teaspoon sugar
    1/4 teaspoon cinnamon or nutmeg
    Garnish: whipped topping - optional and/or a sprinkle of the cinnamon/nutmeg

    Directions

    Pour milk into a microwave-safe mug; stir in sugar, vanilla and cinnamon/nutmeg.  
    Microwave on high for about 70-80 seconds, until hot but not boiling.  
    Top with generous dollop of whipped topping and a sprinkle of cinnamon sugar.  One serving!
