Christmas Strawberry Pie
This is one of the easiest pies ever. I love this for Christmas because it is red. I typically use fresh strawberries but sometimes good ones are not available in the fall and winter so the pie below was made with thawed frozen strawberries. Normally I add the top green of the berry to the pie for decoration which will give you the traditional green and red dessert!
Christmas Strawberry Pie
Ingredients
1 1/2 c. water
3/4 c. sugar
2 T. cornstarch
1/8 t. salt
3 oz. pkg strawberry gelatin mix
4 c. strawberries, hulled and sliced or frozen thawed
1 graham cracker crust
garnish: whipped cream and green tops
Directions
1-Make or buy a graham cracker crust.
2-Clean all the berries and slice or thaw and slice.
3-In a 2 quart sauce pan stir together water, sugar, cornstarch and salt on medium heat.
4-Bring to a boil while stirring.
5-Add in dry gelatin mix until dissolved.
6-Remove from heat and pour 1/4 of gelatin mixture into crust.
7-Arrange strawberries in crust and pour remaining gelatin mixture over the top. If you have extra gelatin mixture don't worry you didn't do anything wrong. Sometimes I'll have up to 1/4 extra depending on the weight of the berries.
8-Cover and refrigerate until set, 2-3 hours. Serve with whipped cream. Serves
