Speaking of Christmas Goodies, I am sharing 30 Days of Christmas Goodies right here on my blog. Stop in daily to get a new one. Today I want to share with you my tasty Holiday Toffee. This is one of our family favorites and it is easy-to-do. The toffee is light, sweet and has a crunchy butter taste with just the right amount of added smooth chocolate on top. Sound complicated? It isn’t! It is quick and easy.

Holiday Toffee

Ingredients

1 pound of butter, room temperature
1 cup of sugar
1 package of chocolate chips (milk, semi sweet, dark or white)
1 package of crushed nuts of your choice

Directions

1-Butter a 11 X 17 jelly roll pan or cover it with parchment paper/foil.
2-In a large pan set for low heat, melt the butter and sugar.
3-Once melted, increase the heat to high and bring to a boil. Stir constantly until it reaches peanut butter tan color.
4-Quickly add in all but 2 tablespoons of the crushed nuts.
5-Remove from heat and evenly pour into jelly roll pan.
6-Let toffee cool for 5 minutes and then sprinkle on the chocolate chips.
7-Let them melt for a minute or so until the melted chocolate can be spread.
8-Add on the remaining 2 tablespoons of nuts.
9-Let cool completely and then break into pieces.

Kitchen Notes:
The nuts can vary depending on what you prefer. Almonds, pistachios, pecans and walnuts work great. Create a mix or stick to one variety. If you have someone with a nut allergy, skip the nuts! You can also add an extra decorative punch with seasonal sprinkles on top! This toffee works great to have on hand to serve family and friends who drop in during the holidays. It is also wonderful to wrap up and give as gifts.

  3. My favorite thing to give out (because everyone loves it) is rum cake so that would be the first thing I make. Crossing my fingers. I want a mixer like this so bad!!!
